Chicken Fajita Soup

I cook dinner pretty much every night of the week.  It’s not so bad since I enjoy cooking.  Also, it’s cheaper (Budgets SUCK!) and I know what is going into the food I am feeding my family. 

I try to cook enough food to feed the 4 of us and have some leftover for Babe to have for lunch.  He comes home for lunch on most days.  If I wasn’t so lazy I would have it for lunch too, but that means that I would either have to wake up earlier to pack it or pack it the night before.  Personally, I would rather be sleeping.

The other night I made chicken fajitas for dinner.  We ended up with a good amount of chicken and peppers/onion mixture left. The recipe said it serves 4, but in my case only 2 1/2 servings were needed.  One serving each for Babe and I and 1/4 of a serving for each the kids.  So, I decided to try something different with the leftovers and make up a recipe for soup.

Chicken Fajita Soup

Ingredients:

About a pound of leftover chicken fajita chicken with peppers/onion mixture*
1 cup frozen corn (I used frozen roasted corn from Trader Joe's. If you can't find roasted corn regular frozen corn will work.)
1/2 cup water
2 1/2 teaspoons cumin
1 1/4 teaspoons chili powder
1/8 - 1/4 teaspoon cayenne pepper (Adjust to your level of spiciness.)
14 oz or 1 can of chicken broth
(2) 14.5 cans of diced tomatoes with green chiles
15 oz tomato sauce

Directions:

Chop the chicken and peppers/onion into bite size pieces.

Add all of the ingredients in a pot and bring to a boil. Once it is to a boil simmer for about 45 to 50 minutes.

While you are waiting...
Heat a skillet with about an inch of canola oil. Cut flour tortillas into thin strips and fry for 3 minutes or until crisp in the hot oil.

Other Toppings:
Diced onion
Avocado (Don't forget to squeeze a little lime juice over it to prevent it from turning brown.)
Cheese
Sour cream
Cilantro

*If you don't have leftover chicken fajitas and still want to make this recipe, don't fret! You can use any leftover chicken you have or you can get an already roasted chicken from the store. Then, all you have to do is saute some garlic, onions and peppers.
