Martha Stewart’s Cookies and Cream Cheesecake

Have you read Martha Stewart’s Cupcakes book yet?  If you haven’t I will tell you that if you are an avid baker or just like cupcakes in general you MUST read this book.  It is one of my favorite cookbooks.  The recipes in the book include everything from Marble Cupcakes to Meyer Lemon Cupcakes. 

I decided to try and make Martha Stewart’s Cookies and Cream Cheesecake Cupcakes and the results were fantastic!  The combination of cream cheese and sour cream give this cake a wonderful tangy flavor and the cookies give it great texture and sweetness.  For this batch I used the holiday themed Oreos which is why you will see specks of red in the pictures.  I was in a festive mood.

What’s even better, is on the bottom of the cupcake you can see the holiday graphic of the Oreos.  When I put the Oreos in the pan I purposely put the designs side down so you can see it through the cupcake wrapper.  Cute, right?!?

Martha Stewart's Cookies and Cream Cheesecakes

recipe adapted from: martha stewart's cupcakes

Ingredients:

42 cream-filled sandwich cookies, such as Oreos, 30 left whole, and 12 coarsely chopped
2 pounds cream cheese, room temperature
1 cup sugar
1 tsp vanilla extract
4 large eggs, room temperature, lightly beaten
1 cup sour cream
Pinch of salt

Directions:

1. Preheat oven to 275 degrees. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.

2. With an electric mixer on medium high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat until combined. Beat in vanilla.

3. Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.

4. Divide batter evenly among cookie-lined cups, filling each almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire racks to cool completely. Refrigerate at least 4 hours (or up to overnight). Remove from tins just before serving.

    Oh My!!! LOOKS YUMMY! And looks easy to make.. humm…. Easier than the Chocolate covered oreos.. oh yeah, my white chocolate.. FAILED! I burned it.. 🙁
