Peppermint Bark


To me, nothing says Christmas more than peppermint and chocolate, which happen to be one of my favorite flavor combinations and Peppermint bark is one of the many things I adore about the holidays.  Unfortunately, to buy Peppermint Bark at the store it costs an arm and a leg.  This year I decided to make it myself and the results were wonderful. 


Peppermint Bark


2 cups bittersweet or semi-sweet baking chips

4 tablespoons vegetable shortening

12 oz. white chocolate

crushed up candy canes


1. Line a 8x8 pan with foil.

2. Melt the bittersweet or semi-sweet with 2 tablespoons of vegetable shortening until smooth. Once the chocolate is melted pour the chocolate into the prepared pan. Place in the refrigerator for about 30 minutes or until the chocolate has set.

3. Remove the pan from the fridge and melt the white chocolate with the remaining 2 tablespoons of shortening until smooth. Once the white chocolate is melted pour it over the dark chocolate in the pan and sprinkle evenly with the crushed candy canes. Place back in the refrigerator for at least an hour until the choclate has set.

4. Carefully lift the sides of the aluminum foil to remove the peppermint bark from the pan and break it into pieces.

    OMG.. these seem so easy to make… I think I will try to make them for our Christmas party… ; )
