Millionaire’s Shortbread and a Giveaway

I [heart] anything and everything that is easy to make or do.  Yes, I am lazy!  I especially love when a recipe is easy to make but it tastes like it took me all day to make.  This recipe is one of them!

This cookie bar has a shortbread crust, a caramel center and a semi-sweet chocolate topping.  It pretty much melts in your mouth!

Millionaire's Shortbread

recipe adapted from: 5 ingredient fix

2 sticks butter, cut into small pieces, plus more for preparing pans
2 cups all-purpose flour, plus more for preparing pans
2/3 cup sugar
1/2 teaspoon salt

caramel layer:

2 (14-ounce) cans sweetened condensed milk
2 tablespoons butter

chocolate topping:
3/4 pound good-quality milk chocolate

Preheat the oven to 350 degrees F.

Butter 2 (8-inch) square nonstick pans and coat with flour, tapping off excess. Place the flour, sugar and salt in a food processor and pulse once. Add butter and pulse until mixture resembles peas. Press the shortbread mixture into prepared pans and bake until golden brown around the edges, about 20 minutes. Remove from the oven and let cool completely.

caramel layer:
In a heavy-bottomed saucepan over medium-low heat, combine the condensed milk and 2 tablespoons of butter. Slowly bring the mixture to a boil, stirring continuously. Continue stirring over the heat until mixture becomes thick and amber in color, about 15 minutes. Pour the caramel over the cooked shortbread and spread evenly using an offset spatula. Cool to room temperature.

chocolate topping:
In a glass bowl set over a saucepan of simmering water, melt the chocolate. Once chocolate has melted, pour it over the cooled caramel layer. Cool at room temperature for about 10 minutes, and then place in the refrigerator to cool completely, allowing chocolate to slightly harden but not get hard. Cut into 2-inch squares

Now on to the good stuff….the GIVEAWAY!!!  As some of you may have noticed DomesticatedDiva has gotten a face lift (all thanks to Purr Design).  Not only has it gotten a new look but both my blogs have been combined into one.

In order to celebrate and to thank my readers, I wanted to have a giveaway.  Actually, Domesticated Diva’s VERY FIRST giveaway!

I like to bake, craft and read.  I buy all my books from Amazon, my Cricut Cake was purchased from Amazon and I have bought a lot of baking supplies from Amazon.  So, what would be a better giveaway than a $20 Amazon gift card?!?  Yup, you read that right.  I am going to buy one lucky reader an Amazon gift card.

Want to win a $20 Amazon gift card?  This is how:

(1)  Leave a comment below telling me what you would buy if you won the gift card to Amazon or you can even just leave a comment telling me “HI”.  Whatever floats your boat.

(2)  If you want an extra entry or two, go to my Facebook (Domesticated Diva) page and “like” it or follow me on Twitter (@DomesticatedD) and leave a separate comment informing me that you “like” or “follow” me.  If you do both you get two extra entries, but make sure to leave two extra comments informing me that you “follow” and “like” me.

You can also look on the side bar of the blog where it says “follow me” and click on the Facebook and/or Twitter link to find me.

(3)  You have until Saturday February 5th at 6pm CSTSorry, time is up!!  At that time I will pick a winner at random.  The winner will be announced on Sunday February 6th.

I must see a separate comment for the extra entry or it WILL NOT count.  I’m sorry only US residents can enter.

Good Luck and Happy Baking!

Wow this looks delicious. I’m going to make it for dessert for my family when I take a trip home from college next weekend!

And if I won the gift card I would use it to help buy either an ice cream maker or handmixer (starting to amass my own collection now considering I bake more than my Mom, ha!).

    Thanks again for the recipe!
