Banana Cream Pie

It seems that every time I buy bananas they do not get eaten.  Granted, I buy a big bunch of bananas and my daughter is the only person in the house that eats them, I still expect all 20 6 bananas to be gone.

IMG_8316Luckily, there are lots of things to make with bananas, like a banana cream pie with an Oreo cookie crust.

Yes, yum is the word to describe this pie!  Especially because it’s topped with fresh whipped cream and shaved white chocolate.

Banana Cream Pie

very slightly adapted from: baking illustrated

Ingredients:

Oreo cookie crust:
about 16 Oreos
2 tbl. butter, melted and cooled

Filling:

2 medium bananas, sliced
1/2 cup plus 2 tablespoons sugar
1/4 cup cornstarch
1/8 tsp. salt
5 large egg yolks, slightly beaten
1/2 cup evaporated milk
1 tsp. vanilla
2 tbl. butter

Directions:

Make the crust:
Using a food process, pulse the Oreo cookies until fine. Place the cookie crumbs into a bowl, drizzle the melted butter over the top and using your hands combine the butter and cookies.

Place the crumbs in a 9 inch pie pan and press evenly into the sides and bottom of the pan. Refrigerate the crust for about 20 minutes to firm the crust. Bake for about 10 minutes in a 350 degree oven.

Make the filling:

Whisk the sugar, cornstarch and salt together in a medium saucepan. Add the yolks, then gradually whisk in the milk and evaporated milk. Cook over medium heat, stirring frequently at first, then constantly as the mixtures starts to thicken and begins to simmer, about 8-10 minutes. Once the mixture simmers continue to cook, stirring constantly, for 1 minute. Remove the pan from the heat; whisk in the butter and vanilla.

Pour the filling in to a shallow pan. Put plastic wrap directly on the surface of the filling; cool until warm, 20 to 30 minutes. Pour half of the filling into the cooled pie shell. Layer the bananas on top of the filling and pour on the other half of the filling. Cover with plastic wrap and place in the fridge for about 3 hours.

Serve with fresh whipped cream.

My daughter took the leftover banana slices and leftover filling and made it into a snack.  What a smart girl!

    Yum. My boss has been asking me when I’m going to make something with bananas (his favorite) so I think this is what I’m going to make for him!
